Describe a favorite snack or meal you enjoy on each motorhome trip.

When we saw this question, we both laughed and said, “Our noodle salad!” The recipe makes a large bowlful and becomes like the manna of biblical times, because it seems the more we eat, the more is left for the next meal. I prepare it at home, as it keeps well in the refrigerator for more than a week. It is handy for quick meals when we are on the road and don’t want to spend time preparing food. To make this dish, combine 2 cups of cooked macaroni; 1 can of Spam, cut into small pieces; 4 slices of cheese, cut into small pieces; 1 large can of pineapple (crushed or tidbits), drained; several chopped pickles (sometimes I just use pickle relish); 4 hard-boiled eggs, cut into small pieces; 1 small can of sliced black olives, drained; chopped celery, if desired (my husband, Carl, doesn’t like it, and the salad is fine without it); and minced onion and salt to taste. Mix these ingredients with salad dressing to the proper consistency (not mayonnaise; salad dressing has more zing). Enjoy!

On moving day we usually have a light, quick breakfast “” ordinarily toast and bacon, with the bacon already cooked. When we make our first stop to do a walk-around about 100 to 150 miles down the road, we snack on hard-boiled eggs that were fixed the day before. To prepare them, make a pinhole on the big end of each egg; boil for 9.5 minutes; drain and crack the eggs; then cover them in ice and cold water for 20 minutes. We have no trouble peeling them 99 percent of the time.

We never leave home without a large bowl of goulash! When you’ve traveled all day, it’s great to just warm up the desired amount and dinner is served “” plus, it tastes so good. We serve it with crackers or bread and butter; a salad and/or fruit; and have a quick, easy, and tasty feast. To prepare, brown and drain 1 pound of lean ground beef. Cook 8 ounces of pasta according to package directions in a large pot; drain when done. Stir in the ground beef, 3 cans of stewed tomatoes, 1 can of whole-kernel corn with juice, 1/2-teaspoon Worcestershire sauce, and salt and pepper to taste. Cool and store in a sealable bowl.
